This kiwi lime smoothie is health, refreshing and easy to make.

Ingredients – serves 2

1 young coconut

2 peeled kiwi fruit

juice of 1 – 2 lime to taste

1 tbsp raw honey, to taste

Break open the coconut, saving the milk. Carefully scrape the coconut flesh out, removing bits of fibre. Blend the milk and flesh with the other ingredients. Refrigerate for an hour before serving. This is a refreshing and nourishing drink.Variations include replacing the kiwi with strawberries, pineapple or honeydew melon.
